White tea is the least processed of all the tea types and as a result, it’s the lightest type of tea. This White Peony tea is a spring tea that has a delicate aroma of fresh hay with a sweet taste and smooth texture. Although not quite as aromatic as a Silver Needle white tea, it has greater depth of flavour and is perfect for when you’re after something light and refreshing.

TASTING NOTES

A delicate floral aroma with a subtle taste of dried grass and hay, finishing with a fresh, pleasantly sweet aftertaste with no astringency. Despite its subtle flavour, it has a great mouth-fill with a sweet, slightly floral aftertaste.


PREPARATION NOTES

 Preferred method: Teapot steep

  3g per 300ml of water
  80 degrees Celsius
  3mins

 

 Gong-Fu style

  3g per 60 – 100ml of water
  80 – 85 degrees Celsius
  30 secs per infusion* (up to 6 infusions)

*First infusion is a quick 3 – 5 sec rinse and isn't drunk.

 

Cold Brew

  8g per 500ml of water
  Cold water
  8hrs in the fridge


STORAGE

Proper tea storage is super important. Improper storage leads to flat, flavourless and potentially weird tasting tea. So as a rule of thumb, keep your tea leaves in an airtight container (the less air inside the better) and away from heat, light, moisture and strong odours.
